My V-Day GF Rolled Sugar Cookie Recipe

Today I put into practice all the learning I’ve done regarding the roles various ingredients play in creating awesome…cookies, in this instance. Tomorrow at the play group we go to the theme is love, so I want to bring in some baked goodies to share with the kids, and I know some of which are gluten free.

My V-Day GF Rolled Sugar Cookie Recipe:
Yield: 60 cookies

1.5 Cups Butter Softened
1    Cups Brown Sugar
1    C Sugar
12  TBSP ground chia seeds
3    Cups All Purpose GF flour –  Here’s my recipe
2    Cups Coconut Flour
3    TBSP corn starch
3    TBSP tapioca starch
1    TSP baking powder
1/2 TSP salt

Rest dough for a minimum of an hour, roll out using tapioca flour.Bake 8-10 minutes at 325 degrees


Fondant frosting: 1st attempt

1.25 Cup confection sugar
1 package of unsweetened watermelon Kool-Aid
1 Tbsp pectin

and a few drops of water at a time until you get a frosting that you can roll out and cookie cut to put on top of your cookies. Use water to glue the backs to the cookies. Good luck! Youtube has lots of awesome resources and professional recipes if you want/need visual aid.
